Burger Relish

1kg Gherkins or Cucumbers (washed skin on and grated)
500g Onions (peeled and grated)
500ml White Vinegar
2 Cups Castor Sugar
1/2 Cup Corn Flour
1/2tbls English Mustard
1tbls Mustard Seeds
1/2tbls Curry Powder

Place grated gherkins/cucumbers and onions into a bowl, sprinkle with a 1tbls of salt and leave overnight to extract some of the water.
Drain cucumber/onion mix and place in a pan with all other ingredients and mix well.
Bring to a boil and then simmer for 5-10 minutes before bottling into sterilised jars.

Thai Sweet Chilli Sauce

500g Very Ripe Tomatoes (roughly chopped)
4 cloves of Garlic (peeled)
4 Large Red Chillies (seeds left in for heat)
6cm - 7cm Root Ginger (peeled)
300g Castor Sugar
2tbls Thai Fish Sauce
100mls White Vinegar (Wine or Malt)

Place all ingredients except sugar and vinegar into a food processor and blitz to a nice pinkish puree.
Place this puree into a large pan with the sugar and vinegar and bring to the boil.
Reduce to a simmer and reduce until 'jammy' in consistency.
Bottle into sterilised jars.
Can be used as is or mixed with mayo as another dip.

Home Made Cassis

Fresh Blackcurrants
Vodka
Sugar

Take large, clean and sterilised jars and three quarter fill with washed blackcurrants, stalks removed.
Fill jars with vodka and tightly seal. Keep the jars in a cool, dark place for at least a month shaking occasionally to release flavour.
When ready (usually late November ready for Christmas); pour
contents of the jars into a pan and bring to the boil.
Strain and collect the juice (don't throw blackcurrants away - make a lovely jam).
Measure the liquid and for every 100ml add 60g of sugar, return to the pan and bring to a very gentle simmer.
Simmer for about 2 hours until reduced slightly and syrupy. Turn off heat, add a little top of more vodka and bottle into clean, sterilised bottles.
Enjoy a large splash with sparkling wine on Christmas Day.
